having sauteed broccoli in olive oil .mmmm good
1-2 cloves garlic chopped fine.
veggie of choice, squash, zuccini, broccoli, cauliflower, green beans etc.
spring onion chopped fine (use the whole thing except for the little rooty part)
extra virgin first cold press olive oil
kosher salt.
white wine vinegar
cover the bottom of a pot in olive oil, heat the olive oil, don;t burn it. if it burns it gets bitter, throw it out and start over.
when war throw in the chopped garlic and liiiightly brown. again, don;t burn, they will cook quickly.
then scallions for a few secs then throw the veggies in. put in a little white wine vinegar then top with some kosher salt.
cover and cook on medium heat shaking the pot real well every five minutes till done. broccoli will be done in like 10 minutes, squash takes longer.
the salk pulls the moisture out of the vegiges so they cook in their own juices.
this is soo worth it and tastes great! broccoli is my favorite.
also good is green beans with dill and baby pearl onions. (leave the baby's whole)
